If you are going to go through the trouble to install OS X, then you might want to consider starting with 10.2 or 10.3 so that you would be pretty much current. The consensus is that these perform better than previous versions.
Having more ram is definitely a plus. I had 352Mb and 10.3 used just about all of it all of the time. Now that I have upgraded to 816Mb, it uses 700+ and I'm not doing anything different. 512Mb would be a good start.
Also putting OS X on its own partition is a good idea. If anything goes wrong, it makes it easier to restart in a different OS. But make sure you leave plenty of extra room on that partition. I only I left a gigabyte and that really isn't enough. I wish I could repartition that drive without having to start over.
