If you can get the G3 L2 card go for it. It will kick the 300MHz 603's butt.
But the 300MHz 6500 board will be more reliable long term.


I will be using the machine mostly as a TV, and for some light,
elementary-level gaming (with 5-10 year old educational software) for my little ones...



You could easily get by with the 180/200 MHz logic board with 128 MB RAM for the uses you mentioned.
I have a 225MHz 5500 logic board in a LC 580 and it runs good for what it is, but maxing the RAM is highly recommended.



For that matter, let me ask about monitors; I want the biggest (& cheapest!)
monitor I can find. I can get an old Apple 20" MultiScan or a Radius color
2-page monitor, which one do y'all advise me to get (or another old/cheap type?)


Biggest cheapest ? go with a VGA monitor, they are cheaper but they are harder to find in larger sizes.
Of the 2 you mentioned I would go with the Apple monitor for your uses, but it's kinda overkill unless you can get it cheap. Add a PCI video card and use 2 17 inch monitors, they are getting cheap and it's a nice set-up having 2 landscaped 17 inch monitors.
