Should work fine if you don't overdo the power consumption.
Get a lot of photos of the process and post them on Applefritter.com or Macmod.com when your finished.

I know the 2nd riser will fit physically, but don't know if there are issues with the power supply from the original 6360 driving 2 cards. (I have a full 6360 and a two slot riser from my spare parts box)
