Why go to the trouble? Is there some reason to mirror? Why not just format the external how you like and transfer all you need or will ever need to it and use this "secret external" and forget about the internal until the 12 year old grows up or goes away. It is a bit of a drag whichever way you look at it: unless there is a key command to start from this external, you will need to start from the internal to change the startup disk control panel and then restart with the uncorrupted unfiddled-with external. The other thing you can do is assess whether she is likely to mess with the system folder (even tho it can be locked and just as easily unlocked) or your apps and preferences. If not, just use the external not for booting but to save your worked-on docs to. When the enfante terrible danger is over you can one day move them back and have the external as a good backup or for extra storage or whatever.
