Gerry,

The simpliest solution I found to this weird problem was to just make a
new but duplicate of the existing icon, and the new one showed the text
correctly with the icon. Then just deleted the old icon to get rid of it
off the desktop. In a couple of cases, had to wait to rename the icon
till got rid of the old, but then could rename to the old text without a
problem, and the icon/text combo remained on the desktop as expected.
