Holly, Just had a thought, are you using transparency and or gradient mesh's in the doc, if so have you checked the transparency and printing and export settings in the document setup, it maybe that the rasterize dpi settings in these options are low. Also the output resolution (flatness) of the document or path can produce dodgy,chunky,looking curves go for a high setting of 2400 to smooth the vectors.
