Select the TouchUp Text Tool. Click on the line of text where you want to insert new text. It will show you a blinking cursor, and you can type in the text you want to add. You can also delete existing text.
You will only be able to edit one line at a time using this method. Acrobat isn't designed to support normal word processing. If you need to make more extensive changes, you'll probably want to save the file as DOC or RTF.
If you don't like the Acrobat DOC output, or if you don't have the full version of Acrobat, you might want to try BCL Drake for converting your PDFs to Word for editing. Drake gives you editable RTF output while keeping the page layout intact. A free demo is available from our website at http://www.bcltechnologies.com.
