A word of warning.
We had a plugin designed for a similar purpose. (in our case we had to force
the print to be double sided). In our case the company standard was HP. A
problem arose when we tried a specific model of HP printer whose
accompanying driver put the joboptions in the wrong part of the Postscript
file (did not follow conventions), so the plugin does not work for those
cases.

High end Xerox printers allow you to do tray selection using device
specific Postscript commands inserted into the print stream. A plug-in
can do this by catching the notifications PDDocWillPrintDoc and
PDDocWillPrintPage.
Liquent does this in their CoreDossier application to insert tabbed
pages and bind documents. You can probably find the old XDA ( Xerox
Document Assembler ) code floating around Xerox which also did tray
selection.
