There is NOTHING WRONG with Apple's "Save as PDF" function with respect to Prepress - in fact, it does a BETTER JOB than many other tools as it will tag ALL colors with an ICC profile!

Unless you are using the Distiller PPD this is a BAD IDEA, since it means that the PS generated is for your particular printer and NOT optimized for Distiller/PDF output.
I see that you've got Acro 6 Pro, so you should have the OSX version of Distiller.
And if you have Acrobat 6, then you should just be printing to the "Adobe PDF" printer which is a "wrapper" around "print to postscript & distill" and is what you should be using!
