Melvin, I've been thinking about starting my own list. In looking at Majordomo, who is not a real person but the software that runs this list, the options are pretty canned. It's just a dumb robot...I don't think it knows how to strip content. If someone who wants to be removed can't click on a link to remove themselves from the list, or scroll to the bottom of the page, then I really don't know what to say. Perhaps it would get read if it was visible without scrolling down. That would seemingly apply to both the digest and non-digest modes. Just my unsolicited opinion.
