You may need a smaller format to make securing depth of field
possible.
Thats fine, but it is a technical compromise, you are trading
off one thing (reduced granularity and detail capturing ability)
for something else (in this instance, depth of field).

You might want grain for esthetic purposes, which is fine.
That's an artistic judgement.
