A lot of smaller sensors in place of one big one. There would be gaps between them, but if you could keep the gaps small enough then you could perhaps interpolate the missing bits. Alternatively, multiple lens and sensor pairs like the Polaroid passport cameras with the software handling the overlapping bits.
