Kevin, there are lots of ways other than unsaturating
images.  In Photoshop, each of the R, G, and B composites
can be blended to produce a B&W with the channel mixer.
Most folks recommend adjusting the source channels so that
they roughly equal 100 percent.  Make sure the monochrome
checkbox is ticked.

The hue/saturation adjustment layer can then be used to
tint your BW image.  Make sure the Colorize checkbox is ticked,
then fiddle with hue and saturation sliders.

There are also photoshop plugins by TheImageFactory and others
that provide even more control over BW image generation, but
I usually find something pleasing using the 2 photoshop adjustments.
