The easiest way is to shoot RAW format and correct it in conversion to your desired format.

If it's too late for that, try the Color Balance transformation in Picture Window Pro from Digital Light and Color.

I've worked with PhotoImpact XL, Photoshop CS, Photoshop Elements 2 and Picture Window pro. Of the four, Picture Window Pro has been the cleanest and most straight forward (for my tastes) while still maintaining great flexibility. It's disadvantage is the lack of a batch mode to process several images with the same settings.

Trial versions of all of the above can be downloaded from their respective publisher's web sites.

PhotoImpact, Elements and Picture window are all in the $100 US range. Photoshop CS is several hundred dollars.
