I took a similar class last year at the local community college, and found it to be quite useful. It's funny that you mention "learning by doing" because that was my instructor's motto. After a few introductory lectures in the first weeks, the class basically consisted of watching a video about a notable photographer's technique, and then spending a few hours in the studio just experimenting - with a requirement that each class member spend 4 hours a week or more in the studio, just experimenting. It was good!
