I saw a programme with the comedian Billy Connoly a few years ago where he
extolled the virtues of a pie floater bought from a van on the waterfront
of some big city in Oz (sorry, can't recall which one tho).

The pie van was an icon in Adelaide (wow, we have been called a 'big city'!). AFAIK it vanished, it may only make occasional, guest appearances.

It still exists, on North Terrace, outside the Railway station most days. Not there 24hrs, but certainly regularly.

There used to be one in Glenelg and Norwood also, but I dunno if they still
are.

But, I expect they mean Harry's Cafe de Wheels in Sydney, as previously
suggested. Its more 'waterfront'. But of course sells Pie&Peas, not a real
Pie Floater :)

Of course its almost 'traditional' pie-floater time again (this weekend being Anzac day). The pie-floater is a representation of the Anzacs at Gallipoli in the first world war. The pea-soup being the sea, the pie the dead soldier, and the tomato sauce the blood. Who knows why anyone came up with a food item representing a corpse to commemorate the event, but there you go. And its still delicious :)
