Well, I haven't used variable-aperture zooms on manual cameras very often -- they are far more useful and there is less inconvenience with cameras with at least some auto exposure, because the camera would then at least adjust for the changing aperture value when zooming. But my point was that the variable zoom "feature" alone would not cause improper exposure, though it certainly does add another element of inconvenience to its use with a manual camera.

I have the F 70-210 zoom, and I would be less likely to use it on a manual focus camera because of the poor manual focus feel alone. The loose focus feel (giving a feeling of imprecision) and very thin manual focus ring, I think, knock it out of contention for use with an all-manual (and manual focus) camera in favor of the M 80-200, even without taking the variable aperture issue into consideration.

So have you ever shot with such a zoom on manual camera? This seems to
me like you didn't. Adjusting exposure WHENEVER you change the zoom
setting is far from convenient, it's a complete "pita". Especially
with a camera with full stop shutter speeds (as most manual cameras
have)
