According to some, it originated from the old computers called VAX.
The geeks started calling them VAXen instead of VAX's. Influenced from Oxen and maybe Vixen.
This happened in the 70's, so it's a pretty old saying.


That then made people talking about Boxen when they meant Unix-based computers.
This then spread into using 'xen for all sorts of things, as you say.
