The only in camera setting that affects the RAW capture is the sensitivity (ISO) setting, which is an actual change in the voltage level of the sensor.
Minor correction: when setting ISO, some cameras change the voltage level ("gain" of the sensor) while other cameras simply offset the values recorded to a different level according. Some do both. Each method of providing ISO range has its plusses and minuses, and has to be known for the RAW conversion for that particular camera.
