OK, that seems to be the general consensus, but isn't the original image
captured in B&W and then converted to color, and then moved along for
further processing? If that's the case, then isn't the RAW image and
information is already manipulated.

Any file format has been manipulated to a certain extent, RAW files are manipulated less though.


The less processing done in camera, the more that can be done in post processing.
Think of a RAW file as an unprocessed negative, and a JPEG as a processed negative.
