Hi Kevin, If one is shooting digital there's really no such thing as B&W ... shooting a desaturated image is generally a piss-poor substitute for post processing the captured image using good quality editing software (THERE! - all the buzz words in one sentence <LOL>)
Second, people don't want to develop B&W film, or can't find a lab that will do it for them, so they'll shoot color, scan the film, and the process it in Photoshop to make it look like B&W. I am not advocating these options, although I sometimes use them.
