the ones that you can set are the ones that correspond to the click stops on an aperture ring. it's harder to set between clicks on a ring, but it can be done. it can't be done on the *istD series because they chose not to, but i don't see where 1/10 stop accuracy would be worth it, at least in manual exposure mode. that's part of the reason i shoot Av or P most of the time. i set what i want fixed and the rest varies in very tiny steps.
