And why should they? They adapted enough to preserve their genome, which is what survival is all about. The stresses placed on them were enough to induce that much change, but greater change was not necessary. Nature is economical and doesn't produce what isn't needed. If we introduced birds capable of supersonic flight, the moths would become super moths or become extinct.
