recently a salesperson recommended the Fuji NPZ Pro and said that it was a better film for pushing to 1600 ISO.

While I love NPZ 800, between Press 800 and NPZ 800, Press will take the underexposure better. NPZ is a lot like NPH and NPS -- good exposure is a must.

As for pushing C-41 film, Wheatfield Willie and I seem to be the only people who know that you can't actually push colour negative film the same way that you can push black and white (aside from a couple of specifically designed films that are exceptions to the rule). Basically, if you shot two rolls of Press 800 at 1600, pushed one and didn't push the other, the differences would be that the unpushed roll would have better colour and less base density, and other than that they'd be pretty similar.
