With an Apple computer running Mac OS X, simplest and easiest way is:

- plug output of record player/amplifier into the Sound In port.
- open the QuickTime Player application (you need QuickTime Pro for  
recording options, $29 to register for it).
- set the audio recording preferences.
- use the command "File->New Audio Recording" to start capturing from  
the record player, stop when done.

The captured sound can be dropped into iTunes, tags and name set up,  
and from there you can burn a CD (audio, mp3, etc).

Another option is to use a more proficient sound editing application.  
"Audacity" is the one I use ... it is a free, open source sound  
editor which runs on Windows, Mac OS X and Linux/Unix systems. It can  
be used to record, edit, and export... See full information at

Presuming that the computer hardware she wants to use has a sound  
input capability and a means to output to a audio or MP3 CD, this  
will get the job done.
