And yes, I do occasionally shoot f8 and hyperfocal on SLR's, typically 
with a very wide (24mm or 19-35 at 19mm) lens so I don't even have to 
frame (hipshooting) although I'll often just frame and shoot. I do 
prefer to shoot at wider apertures though, you get more of the unique 
characteristics of the lens that way, and I do tend to like shallower 
DoF, DoF control is very important to the way I work in daylight (At 
night it's more a matter of how much DoF can I get?).

And no, it's not more difficult to focus until you get to f5.6 or 
smaller (Smaller usually since I don't use split-prism screens if I can 
avoid it). In fact with some cheaper lenses (like my Soligor 35/2.8 
screwmount) it's actually easier as they pick up sharpness and contrast 
when stopped down 1-2 stops.
