I've matted some prints with large white areas using double mats. The outer wide mat is white, but the double matting allows a very narrow strip of another color to show around the print. I've used black for the inner mat, and also a sort of steel gray, since mine are black and white images. You need the kind of mat board that has the color all the way through for this to work best.
