rsync is already built into OSX 10.4 and is designed to keep a separate or remote disk synced. It can be made to run automatically each day/week/hour/whatever, and even keep grandfather-father-son bakcups if you really want to (I've never tried this though.) If you want an easy to use graphical interface for rsync (instead of a terminal window) then google for rsyncx.
