Even more effective is wrapping them in a real kitchen towel (remember
them?  made of cotton, or linen, or the like ...), and twisting.  That
squeezes far more water out of the grated potato(e)s than you can if
you do it by hand.  The downside is that potato starch stains badly,
so it's best to have an old towel designated for this process.

I believe I came across this technique in a Julia Child cookbook.
