I don't think they have a choice, The "DSLR market staibilizing" is more or less shorthand for "market saturated and low demand". If the market is going to be relatively small for $1K and lower small form-factor DSLR's, how much smaller will it be for medium format DSLR's and how many people will be in the market for a camera that's likely $5k or more?
It doesn't make sense to produce something that will not generate a net profit.
