Based on my (admittedly limited) experience in China David - eat local! 
While some of the places weren't real flash, the food was excellent and very 
cheap.  The best example was an egg sandwich (fried egg between the halves 
of a sweetish bread bun, actually) for breakfast from a hole in the wall 
outside our hotel in Beijing; cost 1 yuan - about 16 cents Australian.
