I haven't done much mud-riding on that bike but I suspect that discs  
would be a lot better as the braking surface will be out of the mud  
(unlike rims).  I wouldn't expect grit to be a problem as it'll end  
up being pushed into the holes.

The brakes on that bike are insanely powerful so you only ever need  
to use one finger.  This leads to better control of the bike (more  
fingers on the grip) and much less strain on the hands.

I don't think servicing is too much of a problem.  Cheap disc brakes  
still use cables so they'd be easy.  The hydraulic ones can vary but  
they do seem to be pretty reliable.
