I sure I'm going to be proved wrong by a printer-savy, but almost for
the academic exercise here's my logic:

If the recommended for 8x10 is 5mpixels or 2000x2500, for an image
double size if would be 4000x5000 or almost 4 times the size of your
image.

But the advice I always read is that the larger the image the more
distance you put between yourself and the picture so you might be ok
with less DPI.

And that would explain why in this website the recommended is for
16x20 is 3200 x 2500 or a little bit more than 200%:
