I sure I'm going to be proved wrong by a printer-savy, but almost for the academic exercise here's my logic:
If the recommended for 8x10 is 5mpixels or 2000x2500, for an image double size if would be 4000x5000 or almost 4 times the size of your image. But the advice I always read is that the larger the image the more distance you put between yourself and the picture so you might be ok with less DPI.
