Don't use autofocus! Seriously. The wedding pro I worked with briefly
said he never found autofocus good enough and he was shooting with a 
Canon 1D - a sporte/PJ camera. Zone focus and manual focus.

Shoot Raw and worry about color balance later. (White bride's dresses 
make color balancing in Camera Raw or Lightroom a snap.)

Yeah, this is what the histogram is for. Still, if you use 
multi-segment metering and shoot Raw you can often recover enough to 
get something usable.

Yes, this is something that has bothered me in the past. A good 
photographer will have discussed this with the bride & groom 
beforehand, so he and they should know how the shoot's going to go 
down. Part of the "photojournalism" style of wedding photography isn't 
just how the resulting photos look, but how the photography is done: 
It's sort of like pretending that your wedding is being "covered" by 
paparazzi.
