On the Mac OS version, you can view each channel independently using the Command-1 (R), Command-2 (G), Command-3 (B) shortcuts, and see the three channel composite with Command-`. I'm pretty sure that on Windows systems this would be Control-<key>.

This is equivalent to using the Channels palette to see and operate on the R, G and B channels independently
