Well, it's funny you should ask, because as you (and many on this list) know, I was one of the last film diehards here. I still miss a lot of things about film, particularly the way it looks, but overall, I think that I've more satisfied than I have expected to be with conversions in PS. Now that I think of it, what I miss most about film is using my little Leica CL. If I could get a digital equivalent, like the Epson that Cotty has (I know, it's bigger than the CL, but RFs in general are not nearly as "intimidating" as DSLRs), I'm sure I'd never think of film at all. Of course the biggest difference that digital has made for me is that it's given me the ability to shoot at will without worrying about cost or how many frames I might have left for the day. Some days I'll shoot several hundred and I don't have to worry about the same things I did with film. The irony is that for much of my shooting (this photo is an example) I'm not taking any more frames per subject than I was before. I took only one of this fellow, not wanting to be seen, wanting it to be truly candid. The beauty of digital is that I took dozens of shots earlier in the day, and quite a few afterward and I wouldn't have had that luxury with film.
