When I was making B&W 40 x 60 prints from 35mm Tri-X in the late 1960s, the DoF of the print was the grain. If the grain was sharp corner to corner, the print was sharp, even if it was just various blobs on the paper.
Of course, if you stood over the 'X' on the floor, you'd see that California street at 3 am from a few blocks west of Van Ness (Gough) was sharp as a tack - infinite depth of field.
