Thats one of those things that you have to be on the same page with your subject. Don't be afraid to go through the process of what he's doing a few times, figure out where your best camera angles are and have the subject pose them for you if what he's doing isn't really time sensitive. Documentaries don't realy document what the subject is doing in real time, they document what the subject is doing based on a timeframe that allows the photographer to get what pictures he wants.
