The way I look at it Pentax 6x7 ~60x70mm with 800 Diagonal field of view 6.41° ==> 1.5x crop Pentax digital ~16x2 with 251mm lens. Now depending on how good your scanner is, (of if you still do wet printing), you may get better results with the 6x7 and the 800mm lens, but if I were going to carry the thing I'd go with the APS-C kit, if I were carrying it any distance.

Everybody keeps telling me field of view and focal length are
independent, and I have no reason to doubt this.

Depends on if you measure the field of view by what the lens brings to the table, or by what the sensitized capture medium sees.
