Be sure that the custom function 'Use Aperture Ring' is set to
'Permitted' and set the camera to M mode. Then you have two options as
to metering.

1. Use the DoF preview, this will give you a numerical readout for how
far off the currently selected exposure is, it reads out up to +/- 3
stops IIRC. Note the readout only is accurate when DoF preview is
engaged.

2. Press the AE-Lock button and the camera will stop down the lens,
meter and then set the appropriate shutter speed.

If you only care about shooting wide open or are using screwmount or
preset aperture lenses you can also use Av mode, but it will meter for
wide open only.

Most people use option 2 in this case.
