It would be nice to choose when to wind the film.  Sometimes you don't
want the noise associated with the film winding on.  For example, if
you're shooting in a quiet environment, engaging in "stealth"
photography, perhaps nature photography, in the theater or at a music
performance, and so on.  Any time or any place where you, as the
photographer, want to minimize your encroachment on the subject or
surroundings. 

Being able to disengage the motor wind is a feature that is sorely
lacking on many modern cameras, yet they're loaded with all sorts of
trivial bells and whistles.  IMO, there's a time for a winder or motor,
and times that it's not the best option.
