As I mentioned before (acknowledged improved K7 exposure accuracy
aside) given the vast majority of technical and anecdotal user reports
I'm loath to pay good money to test it for myself. If the K7 sensor
were that much better than the K20D then surely there would be a
general consensus as such, much the way that the K-x is virtually
universally praised in pint and by users for its high ISO performance?

So will you not be "upgrading" to the K7's replacement (assuming that
it has at the very least improved high ISO performance)? I might
consider purchasing one.
