You could just use a changing bag.

If your bathroom doesn't have an outside window, add some weatherstrip to the bathroom door so you can block out stray light. If it does have a window, you can make a black curtain to block it off, but that's going to be more work.

What I'm doing right now in my apartment down at school, I just have to turn off the dining area & kitchen lights and throw a towel down at the bottom of the door to get it dark enough to load film into a tank.

If I was going to be there for longer than a year, I'd add the weatherstrip.

I'm processing my B&W film in the kitchen sink.

Turns out the darkroom timer makes an excellent kitchen timer as well.
