I like staying at one called Hotel de l'Avenir (Hotel of the Future!) on the rue Madame. It's just around the corner from the Jardin du Luxembourg. A fantastic location, although the hotel is quite pricey, especially with the pound low against the euro. If you're interested enough in that area round Denfert Rochereau and the catacombs, and the observatory, you might be interested in the book Parisians by Graham Robb. His essays about those places are absolutely fascinating.
