When you do an in-camera RAW to jpeg conversion, you get the same thing you 
would get if you were shooting jpegs: a jpeg derived from the RAW data. The 
histogram you see when shooting RAW is accurate enough to put you well in the 
range you need for conversion. If it's centered and bleeding off the edges just 
a bit, you're golden.
