Question: Is it possible to filter outgoing messages, i.e., so copies get filed in the appropriate mailboxes rather than being dumped in the sent folder?
in Mail, no (unless you can find a plug-in); the standard workaround is to bcc yourself and set up filters to catch those bcc's, but you'll also have a copy in Sent; several other email clients, such as Thunderbird, have an explicit option to store replies in the folder of the message to which you've replied
