A lot of food photography does use real food. We have several photography studios for clients here on Toronto. We also have Rogers Publishing, one of Canada's largest magazine publishers.
I've had the joy of entering many a photography studio to the smell of delicious food being prepared. Some studios have elaborate professional kitchens and I've seen up to half a dozen people cooking, preparing and hastily arranging food (because it really does look better fresh, with steam coming off it and droplets of grease forming on the side) for the photographer.
