I assume you are talking about the Kodak infrared, than I agree that the fill is rather spendy, but the final result can be quite different a.o. due to the different halo effects. Even in situations known to me, I bracket plus minus one stop if I think the final picture could be realy nice and I donot want to regret later. For starters without experience, I would suggest to bracket plus minus 2 stops in steps of 2 stops to be sure to bring home at least "something". If you can affort it or if the picture is really promissing, you could bracket plus minus 2 stops in steps of one stop. My experience with willows is, that you should not wait to long, small fresh leaves with branches still visible is nicest.
