Here's my take. They are disorganized, and don't really seem to care. You are shooting it as a favor to them, so shoot it the way you see fit. Obviously you want to get the kiss and ring exchange and all the ceremonial stuff. Besides that, you know how a wedding works, just be in the right spot at the right time and bang away at it.
Take tons of pictures and deliver only the best shots. Don't feel like you need to give them 5000 pictures because you took that many. Think in terms of the story of the wedding, and curate the pictures to tell that story.
