Font sizes are configurable on all the GUIs I've used. Most also let you choose the size of the icons they use. That's all on the "desktop". Some apps definitely don't do as much as they should to accommodate differences in screen pixel size. I generally make the fonts, in particular, bigger, so that (a) I can see them and (b) they're smoother and less jagged (more pixels under each character).
